Vital Protein Strawberry Donuts
With a brand new year ahead of us, my husband and I came up with a few resolutions we want to achieve for 2017. We are notorious for being inconsistent (hah!), so we knew we had to make them easily attainable. A few of our goals include to eat in 4 times a week and consume 70% paleo meals throughout the week. So far, we’ve been pretty good incorporating more soups, salads, and cauliflower rice… until the cravings started to come (oh man, I sound like I’m preggers). 

Lowering my carb intake instantly triggered my sweet tooth. By the time I was nearing the end of the week, I was dreaming about… donuts!
In efforts to eat clean and healthy I came up with a recipe that indulged my cravings without breaking the scale. It’s packed with tons protein and collagen thanks to Vital Proteins which you can read about all its benefits in my last post here. I literally add Vital Proteins in most of the items that I cook, drink or bake. I mean any bit of extra boost of youth, and I’m all in!
Just to note, these donuts aren’t your krispy kreme deep fried kind of texture. I used whole wheat flour, almond flour and protein powder (vital protein) which made them feel more dense. Just a heads up! It’s delicious regardless. I promise!

Ingredients:
Donuts:
1 C. Whole Wheat White Flour (I did half Wheat flour and half Almond Flour)
1/4 C. Sugar/Sweetener/Honey (I used half coconut sugar half agave)
1 Tsp. Baking Powder
1/4 Tsp. Ground Cinnamon
1 Large Egg
1/4 C. Plain Fat Free Greek Yogurt
4 Tbsp. Fat Free Milk
1 1/2 Tbsp. Light Butter, Softened (you could substitute coconut oil)
1 Tsp. Vanilla Bean Paste ( I used vanilla extract which made mine a bit more brown colored)
1 Tbsp. Vital Protein powder
1/2 cup of Strawberries (optional)
Vanilla Bean Glaze:
1 C. Powdered Sugar
1 Tbsp. Fat Free Milk
1/2 Tsp. Vanilla Bean Paste
1/4 Strawberry Puree (I just blended fresh strawberries + 1 tbsp milk together)
Edible Glitter
Sprinkles

Directions:
Preheat the oven to 325 degrees F. and lightly coat a donut pan with coconut spray/oil.
Combine dry ingredients in one bowl.
In a seperate bowl combine wet ingredients.
Add the wet ingredients in with the dry and combine just until everything is fully incorporated. Using a ziplock bag sealed, cut off the end and use a a pipe into the donut pans. (you could spoon as well)
Bake for 10-15 mins, or until baked through.
Donuts will not turn gold brown, the will feel firm.
While donuts are baking, whisk all the ingredients for the glaze in a bowl big enough to dip your donuts in.Once done, remove the donuts from the oven and allow to cool.
Glaze donuts once cooled. If you’re adding sprinkles or glitter, make sure to sprinkle it on before the glaze sets! Glaze will set rather fast.
For the marble swirl effect:
I used Red, Blue, Yellow, Green Food coloring.
Add a few drops on each side of the bowl with the glaze and swirl it around with a toothpick or straw.
Dip your donuts in a circular motion to get the marble effect and Viola!
