SPICY CHICKEN:
Ingredients:
-2 lbs. of chicken breast, cut into 3/4 or 1 in. cubes
-1/2 cup of hot pepper flakes
-2-3 tablespoons of hot pepper paste
-1 tablespoon of soy sauce
-3 tablespoons of olive oil
-1/2 teaspoon of ground black pepper
-1/3 cup of honey
-6 large garlic cloves, minced
-1/2 lb. of mozzarella cheese
-1 cup of bean sprouts or any vegetable you like (optional)
-1 green onion, chopped
-1/4 cup of water
STEPS:
1) Mix hot pepper flakes, hot pepper paste, soy sauce, olive oil, ground black pepper, honey and garlic in a bowl to get the sweet and spicy sauce.
2) Add the chicken and veggies to the sauce and mix well.
3) Marinate the chicken for at least 40 minutes in the fridge (the longer the better).
3) Place the marinated chicken into a frying pan and let it cook for 10-15 minutes.
4) Cover with mozzarella cheese and place it into the oven at 400 degrees.
5) Bake till the chicken is fully cooked and the cheese is bubbling.
UDON:
Ingredients:
-4 cups of water
-5-7 dried anchovies
-4 tablespoons of soy sauce
-handful of dried kelp
-salt & pepper
-1 chopped onion
STEPS:
1) Boil water for 30 minutes with all the ingredients listed above.
2) Remove dried anchovies and boil again for another 30 minutes at least.
3) Add any veggies you like (I added bok choy, enoki mushrooms and bean sprouts) & an egg (optional).
4) Lastly, add udon to the broth.
